- Filet mignon steaks (about 4-6 oz each). Look for steaks that are about 1-2 inches thick and have good marbling. The higher quality of the cut, the more flavorful it will be and juicier it will be when cooked.
- Bacon. Regular-cut bacon is the perfect choice to not only add flavor but also keep the steak moist and juicy when cooked in the air fryer. When wrapping the bacon around the steak, ensure you use toothpicks so it does not unravel during cooking. Thick-cut bacon may not be ideal as it will take longer to cook, which might cause the steak to be overcooked.
- Olive oil helps keep the steak moist, while also giving the rub something to adhere to.
- Beef tenderloin rub. I used my homemade Beef Tenderloin Dry Rub recipe, which contains cracked blacked peppercorns, kosher salt, smoked paprika, garlic powder, brown sugar, crushed rosemary, ground thyme, and dry mustard powder. This rub brings out the flavors of the steak and bacon, while also adding an extra layer of flavor. You can also use your favorite steak seasoning or Montreal steak seasoning.
- Garlic Herb compound butter. This is made with softened unsalted butter, garlic, and parsley, and it also adds an extra layer of flavor. For best results, use fresh parsley.

⏲️ Step-By-Step Instructions
Preheat your air fryer to 400 degrees F.
Pat steaks dry with paper towels to remove excess moisture.
In a small bowl or jar, combine cracked peppercorns, kosher salt, smoked paprika, garlic powder, brown sugar, crushed rosemary, ground thyme, and dry mustard powder. Stir with a fork until well-mixed.


Brush olive oil all over the steaks with a basting brush.
Season the filet mignon steaks with the dry rub, making sure to cover the bottom and sides as well.


Next, wrap each filet mignon with a slice of bacon and secure it with toothpicks.

Place steak in the preheated air fryer basket in a single layer, with space between the meat.

If you like medium steaks, cook for about 12 minutes, making sure to flip the steaks over carefully halfway through. However, if you like your steak medium-rare, cook them for less time, approximately 9 minutes. If you like your steak medium-well, increase the cooking time to 15 minutes. Use a meat thermometer to check the internal temperature.

While the steaks are cooking, make the garlic butter. Add softened butter, minced garlic, and chopped parsley to a small bowl. Mix with a fork until the ingredients are well incorporated.
