Why I Cook Chicken Breast at 385°F
I've cooked a lot of chicken in my air fryer over the years, and boneless chicken breast is one of the easiest cuts to overcook. After testing different temperatures, I found 385°F is my sweet spot - it cooks the chicken quickly without drying it out.
I've also found that the thickness of the chicken makes a big difference. If one end of the breast is a bit thicker, I give it a few gentle whacks with a meat mallet so it cooks more evenly.

- Boneless skinless chicken breasts. Try to use breasts that are similar in size so they cook at about the same rate.

- Seasonings. Garlic powder, onion powder, dried oregano, salt, and black pepper give the chicken plenty of flavor without overpowering it.
How to Make Air Fryer Chicken Breast
Prepare the chicken. Pat the chicken breasts dry with paper towels. If they're much thicker on one end, place them between two pieces of plastic wrap or parchment paper and gently pound the thickest part until they're more even.

Add oil. Drizzle the chicken with olive oil and rub it over both sides.

Season. Combine the garlic powder, onion powder, oregano, salt, and black pepper in a small bowl. Sprinkle the seasoning evenly over both sides of the chicken and rub it in.

Air fry. Preheat the air fryer to 385°F. Arrange the chicken breasts in a single layer in the air fryer basket, leaving some space between them.
Air fry for 16-18 minutes, flipping halfway through. I start checking the chicken at about 14 minutes since smaller breasts may be done sooner. Cook until the thickest part of each breast reaches 165°F when checked with an instant read thermometer. The cooking time may be a few minutes longer depending on the size of your chicken breasts.

Rest. Transfer the chicken to a plate or cutting board and let it rest for 5 minutes before slicing and serving.

Variations
- Lemon Herb: Add 1 teaspoon of lemon zest to the seasoning and squeeze fresh lemon juice over the chicken before serving.
- Spicy: Add ¼-½ teaspoon of cayenne pepper or red pepper flakes.

- Don't cook chicken longer just for more color. This isn't breaded chicken, so the outside will be lightly golden rather than crispy.
- Let it rest. Give the chicken 5 minutes before slicing to help keep it juicy.
