- Potatoes. I used red potatoes for this smoked baked potatoes recipe, but you can use any type of potato. Red potatoes are naturally soft and creamy but hold well when roasting or baking. Red potatoes don't have thick skin so they absorb the smoke flavor from the grill pretty well. Just remember to wash them thoroughly before cooking.
- Black pepper and sea salt, to taste.
- Olive oil. You can also use avocado oil.

Making smoked baked potatoes only requires a short prep time. The best part is you can leave your potatoes on the grill and accomplish other activities in the interim. 🙂
After you wash your potatoes, poke holes into them with a fork. This simple but crucial step ensures that the heat from the grill reaches the insides of your potatoes. I like to poke my fork 3 or 4 times into each potato.

When you're done poking holes, brush the potatoes with olive oil. The oil helps the salt and pepper stick, and leads to deliciously crispy skin (if you're keeping the potato skin on).

Sprinkle on some sea salt and black pepper to taste.

Preheat your smoker to 250°F. Once the smoker is adequately heated, place your potatoes directly on the grill grate.

Smoke your potatoes for 1 hour and 15 minutes. You'll know they're done when the internal temperature reaches 205°F or when the potatoes can be pierced easily with a fork.
