Garlic Herb Butter

Beef Tenderloin Rub
½tablespoonwhole black peppercornscracked
½tablespoonkosher salt
½tablespoonsmoked paprika
¼tablespoongarlic powder
¼tablespoonbrown sugar
½teaspoondried rosemarycrushed
½teaspoonground thyme
⅓teaspoondry mustard powder
Instructions
Preheat: Preheat your air fryer to 400°F.
Make the Dry Rub: In a small bowl or jar, combine cracked peppercorns, kosher salt, smoked paprika, garlic powder, brown sugar, crushed rosemary, ground thyme, and dry mustard powder. Stir until well mixed.
Prep the Steaks: Pat the filet mignon steaks dry with a paper towel and brush olive oil over the steaks.
Season the Steaks: Season the steaks generously with the dry rub, making sure to cover all sides.
Wrap with Bacon: Wrap each filet mignon with a slice of bacon, securing it with toothpicks.
Air Fry the Steaks: Place the steaks in a single layer in the preheated air fryer basket and cook until your desired doneness. (See Beef Temperature Guide in the NOTES below).-For medium-rare, cook for about 9 minutes.-For medium, cook for about 12 minutes.-For medium-well, cook for about 15 minutes.Flip the steaks halfway through cooking and use a meat thermometer to check the internal temperature.
Make the Garlic Herb Butter: While the steaks are cooking, mix softened butter, minced garlic, and chopped parsley in a small bowl until well combined.
Rest and Serve: Once the steaks are cooked to your desired doneness, remove them from the air fryer and let them rest for 5-10 minutes. Top with garlic herb butter and serve with your favorite sides. Enjoy!

*The rub recipe makes approximately 2 tablespoons, enough to coat two 6-ounce steaks. If you are cooking more steaks, double the recipe.
