Smoked brisket is one of my favorite things to make for large family gatherings. It's easy to do; the brisket cooks while I spend time with my guests, and my meat thermometer lets me know when the internal temperature is reached.
And one of the best things is the leftovers I can use the next day! I use them to make these BBQ brisket sandwiches, Leftover Brisket Chili, Leftover Brisket Tacos, and Brisket Mac and Cheese. Having slices of leftover brisket in the freezer makes it easy to put a delicious meal on the table on a busy day!

Ingredients & Substitutions

- BBQ sauce. Use homemade barbecue sauce or your favorite barbecue sauce. I used my favorite tangy BBQ sauce - Sweet Baby Ray's.
- Bread. I used multigrain bread, but you could use sourdough bread, thick sandwich bread, Texas toast, brioche bread, or Soft Whole Wheat Bread.
- Cheese. Use cheddar cheese, Havarti cheese, or Gouda.

How To Make Leftover Smoked Brisket Sandwich
Step 1: Slice brisket against the grain and place in a frying pan or cast iron pan. Add BBQ sauce and heat over low heat until hot.
Step 2: Slather two slices of bread generously with butter. Heat a frying pan over medium heat. Place one slice of bread butter side down. Spoon the heated brisket slices on top of the bread. Top with cheese and another slice of bread, butter side up.
Step 3: Cook the sandwich until it starts to turn golden brown on the bottom. Flip it over carefully with a spatula and cook the other side until golden brown.
Step 4: Remove from the frying pan, cut in half diagonally, and serve immediately with coleslaw or a simple green salad.
Variations
- Spicy. Add a kick with chopped jalapeno, hot sauce, or red pepper flakes.
- Tangy. Add a splash of apple cider vinegar for a little extra tang.
- Low and Slow. Heat brisket in a slow cooker with BBQ sauce on low for a couple of hours for the tenderest BBQ beef brisket sandwiches.
- Panini. Use a panini press to make the brisket sandwich.
- Loaded. Pile on extra goodies like sautรฉed mushrooms, crispy bacon, or even a fried egg for a hearty, loaded sandwich that turns into a complete meal.
- Slider. Skip the sliced bread and pile saucy heated brisket on brioche rolls or Homemade Air Buns with crunchy coleslaw and extra sauce for a brisket slider.

Leftover Smoked Brisket Sandwich With Barbecue Sauce
Ingredients
- โ cup leftover smoked brisket sliced thin against the grain
- โ cup barbecue sauce your favorite kind
- 2 slices bread
- 2 tablespoons butter or margarine
- 1-2 slices cheese your favorite kind
Instructions
- Heat leftover brisket slices and BBQ sauce over low heat in a frying pan until hot.
- Slather bread generously with butter. Heat a frying pan over medium heat. Place one slice of bread butter-side down in the pan. Spoon the hot brisket on top of the bread. Top with cheese and the other slice of bread, butter side up.
- Cook the sandwich until it turns golden brown on the bottom. Flip it over carefully and cook until the other side turns golden brown.
- Remove from the frying pan, cut in half diagonally, and serve immediately.
