How To Smoke Sausage on Pellet Grill
First, preheat your pellet grill to 225 degrees F, using your preferred wood pellets (hickory, mesquite, apple, etc.).
While the grill is preheating, prepare your sausages by removing them from their packaging and patting them dry with paper towels.
Once the grill is preheated, place sausages directly on the grill grates. Close the lid and smoke them for 30 minutes.

After 30 minutes, flip them over, and smoke for 30 minutes more. Cook the sausage until the internal temperature reaches 165 degrees F. When it reaches this temperature, the sausage is done.

Remove the sausages from the grill and let them rest for a few minutes before serving.
Serve with your favorite sides like Miracle Whip Coleslaw, Smoked Baked Potatoes, Smoked Mac and Cheese, or Smoked Baked Beans for an unforgettable meal!
Enjoy!

Expert Tips for Smoking Sausage
- Make sure to add wood pellets at the beginning when you preheat the grill.
- For a milder smoke flavor, use a fruitwood such as an apple or cherry. For a stronger smoke flavor, use a hardwood such as hickory or mesquite.
- For best results, don’t overcrowd the sausage when cooking on the pellet grill – leave enough room between each piece to ensure they cook evenly.
- Use an instant-read thermometer to ensure the sausage is fully cooked to the proper internal temperature of 165 degrees F.
- To add more flavor, you can baste them with your favorite BBQ sauce during the last five minutes of cooking.
- For a crispier texture, you can finish the sausage off on a higher heat for the last 5-10 minutes of cooking.
- Let them rest for 5 minutes before serving.

Recipe FAQs
Because the pellet smoker cooks at a lower temperature, it is the perfect cooking method. However, to keep the sausage from drying out, monitor the internal temperature of the sausages regularly to avoid overcooking them and drying them out.
There are so many dishes that go well with smoked sausage, such as Air Fryer Bacon-Wrapped Asparagus, Air Fryer Sweet Potato Wedges, Twice-Baked Mashed Potatoes, Baked Beans Recipe With Brown Sugar, and Air Fryer Broccoli and Cauliflower.
Allow the sausage to cool completely at room temperature before storing. Place the sausage in an airtight container or wrap it tightly with plastic wrap. Keep the sausage in the refrigerator for up to 4 days, or store it in the freezer for up to 3 months.
How long to smoke sausages will depend on the type of pellet grill you have, how hot it cooks, ambient temperature, wind, etc. Cook until the internal temperature of the sausage reaches 165 degrees F. This will take approximately one hour.
