    Smoked sausage is one of my favorite things to cook on the pellet smoker for an easy meal. They are quick to make, with virtually no prep time, and are always delicious.

    I used to think that cooking sausages over an open fire was the best way to cook them, but I was wrong. The smoker beats that method hands down.

    You can use this recipe for cooking any sausage, even your own homemade smoked sausage.

    You can use any type of sausage. Some of the best sausages are:

    • Bratwurst: A classic German sausage that's perfect for smoking.
    • Chorizo: This spicy sausage has a unique flavor profile that is excellent for smoked dishes.
    • Kielbasa: This Polish sausage is a good choice for those looking for that classic smokey flavor.
    • Andouille: This Cajun-style sausage is great for adding smoky spice to various recipes.
    • Italian Sausage: These are delicious smoked and can be used in many dishes.

    Ingredient Notes

    This easy smoked sausage recipe uses only one ingredient! Yup, sausage! 🙂 Nothing else is needed as the sausage already contains seasoning.

    The ingredients to make smoked sausages, which is just sausages, are placed on a white counter in the plastic container that they were purchased in.
    • Prepared Sausage. There are many different types of sausage you can smoke. I used Italian sausage, but you can use bratwurst, kielbasa, venison, etc. I prefer to separate the sausage links to make cooking and turning the sausage easier.

    How To Smoke Sausage on Pellet Grill

    First, preheat your pellet grill to 225 degrees F, using your preferred wood pellets (hickory, mesquite, apple, etc.).

    While the grill is preheating, prepare your sausages by removing them from their packaging and patting them dry with paper towels.

    Once the grill is preheated, place sausages directly on the grill grates. Close the lid and smoke them for 30 minutes.

    After 30 minutes, flip them over, and smoke for 30 minutes more. Cook the sausage until the internal temperature reaches 165 degrees F. When it reaches this temperature, the sausage is done.

    Remove the sausages from the grill and let them rest for a few minutes before serving.

    Serve with your favorite sides like Miracle Whip Coleslaw, Smoked Baked Potatoes, Smoked Mac and Cheese, or Smoked Baked Beans for an unforgettable meal!

    • Make sure to add wood pellets at the beginning when you preheat the grill.
    • For a milder smoke flavor, use a fruitwood such as an apple or cherry. For a stronger smoke flavor, use a hardwood such as hickory or mesquite.
    • For best results, don’t overcrowd the sausage when cooking on the pellet grill – leave enough room between each piece to ensure they cook evenly.
    • Use an instant-read thermometer to ensure the sausage is fully cooked to the proper internal temperature of 165 degrees F.
    • To add more flavor, you can baste them with your favorite BBQ sauce during the last five minutes of cooking.
    • For a crispier texture, you can finish the sausage off on a higher heat for the last 5-10 minutes of cooking.
    • Let them rest for 5 minutes before serving.

    • Pecan: This has a mild, nutty flavor that pairs well with pork and poultry sausage.
    • Mesquite: This has a strong, smoky flavor that pairs well with beef and pork sausage.

    It's also worth noting that you can mix wood pellets for specific flavor profiles.

    How do you smoke sausage without drying it out?

    Because the pellet smoker cooks at a lower temperature, it is the perfect cooking method. However, to keep the sausage from drying out, monitor the internal temperature of the sausages regularly to avoid overcooking them and drying them out.
