Smoked Sausage Ingredients
A complete list of ingredients and amounts can be found in the printable recipe card below.
- Sausage. Use any type of raw sausage. If using pre-cooked sausages like Kielbasa or Andouille, they are already smoked and just need to be heated up, so reduce the smoking time. I used Italian sausage, but I also love smoked brats too!
- Optional: Brush the sausages with olive oil and sprinkle on your favorite seasoning for extra flavor if you like.

- BBQ Sauce: Brush with your favorite BBQ sauce during the last five minutes of cooking.
- Casing: Do not pierce the casing, or you will lose the juice inside, which keeps the sausage moist.
Recipe FAQs
Because the pellet smoker cooks at a lower temperature, the sausage doesn't dry out. Just make sure not to overcook it.
Approximately one hour at 225°F.
For a milder smoke flavor, use fruitwood such as apple or cherry. For a stronger smoke flavor, use hickory or mesquite. I also like the Competition Blend from Pit Boss and the Signature Blend from Traeger.
