What are perogies?
A perogy, or pierogi, is Poland's national dish and has been around since the 13th century. It's a small half-moon dumpling made from water, flour, and salt. The dough is rolled out on a floured surface, cut into circles, and filled with anything from potato and cheese to sauerkraut and meat.
Traditionally, they are cooked in boiling water, removed with a slotted spoon, pan-fried over medium heat until crispy, and served with a dollop of sour cream. While they are delicious, the process is time-consuming.
I used to make homemade pierogies and sell them many years ago, but most of the time these days, I don't have time to make them. So instead, I keep a box of perogies in the freezer for a quick meal. And wrapping them in bacon is my favorite way to make them!

- Perogies. I used frozen perogies stuffed with mashed potatoes and cheese.
- Bacon. I used regular bacon.
- Salt and pepper. I used freshly cracked black pepper and pink sea salt.
How To Make Bacon-Wrapped Smoked Perogies
Step-By-Step Instructions
Step 1: Preheat your pellet smoker to 225 degrees Fahrenheit. Cut the bacon slices in half. Wrap each frozen perogy with half a piece of bacon. Place the wrapped perogies, seam side down, on a baking sheet or grilling tray in a single layer.
Step 2: Generously sprinkle sea salt and black pepper on top of the perogies.
Step 3: Place the perogies directly on the grill or a grilling tray with holes. Close the lid of the smoker and cook for 30 minutes.
Step 4: Remove the perogies from the pellet smoker and place them on a sheet pan or broiler pan. Place them under the broiler for 4 minutes to crisp up. The pierogies are done when the bacon is crispy and the internal temperature reaches 165 degrees F. Serve with sour cream and green onion or your favorite dipping sauce, and enjoy!
FYI
Instead of placing the pierogies under the broiler, turn the smoker to 325 degrees F and cook until the bacon is crispy. I have tried both ways, and I prefer the broiler method. The perogies are moist and flavorful, whereas I found they were a bit more dried out on the smoker at the high temperature.
I also tried brushing the perogies with olive oil before smoking them, but this didn't turn out well; the dough was very chewy.
Substitutions and Variations
- Pierogies - Instead of frozen perogies, use homemade pierogies. I haven't tried this recipe with fresh perogies, but I think it would be delicious - just decrease the cooking time.
- Bacon - Use turkey bacon or ham.
- Cheesy - Top the perogies with different types of cheese, such as sharp cheddar cheese, Swiss, or mozzarella.
- Spicy - Sprinkle on red pepper flakes or hot sauce.
- Crispy topping - Combine browned butter, bread crumbs, and parmesan cheese and sprinkle on before broiling.
Serving Suggestions
- Serve with caramelized onions, mushrooms, green onions, and extra bacon bits.
- Make a simple sauce with sour cream and chives, onion powder, and garlic powder.
- Serve with cooked ground beef and tomato sauce.
- Serve with a sprinkle of fresh herbs like parsley, dill, chives, thyme, rosemary, or basil.
- Serve alongside Smoked Kielbasa Sausage, Electric Smoked Beef Brisket, or Pellet Smoked Pork Tenderloin.
- They also go great with a simple green salad and Traeger Smoked Corn on the Cob.
Equipment
To make these smoked pierogies, you will need a pellet smoker. There are many different models and brands of pellet grills, and they may cook differently.
I made this pierogi recipe in a Pit Boss grill with wood pellets. You can also use any other smoker such as a Traeger grill, Char-Broil, Master Chef, Masterbuilt, or ZGrill.
I also used hickory wood pellets, making the bacon taste better! But, of course, feel free to use your favorite wood pellets.

- Sprinkle on some shredded classic cheddar cheese before popping them under the broiler.
- If serving at a party, keep them in a slow cooker on the 'warm' setting.

- The filling of the perogy is extremely hot! Exercise caution when biting into one. Take a second and blow on it to cool it off first. 🙂

We don’t have a smoker. Could I bake or air fry these?

Hi Shanna, you can definitely air fry them! I just tried it out and if you wrap frozen perogies with bacon, air fry them for 10 minutes at 300 degrees F. Then, turn up the temperature to 400 degrees and air fry for 5 more minutes. Do not flip them. Let me know how they turned out for you! 🙂
