🥟 What are perogies?
A perogy, or pierogi, is Poland's national dish and has been around since the 13th century.
A perogy is a small half-moon dumpling made from flour, water, and salt. The dough is rolled out, cut into circles, and filled with anything from potato and cheese to sauerkraut and meat.
Pierogies can be boiled, fried, or both and are often served with sour cream and fried onions.
While they originated in Eastern Europe, pierogies have become popular in many parts of the world, and there are endless variations on the traditional Polish dumpling.
I used to make homemade pierogies and sell them many years ago, but most of the time these days, I don't have time to make them. So instead, I usually have a box of perogies in the freezer for a quick meal. These bacon-wrapped perogies are our favorite way to make them!

The ingredients needed for this recipe are short and simple and can be found at all grocery stores.

- Frozen perogies. I used frozen potato and cheese perogies.
- Bacon. I used regular bacon.
- Salt and pepper. I used freshly cracked black pepper and pink sea salt.

Who doesn't love perogies? They're little pockets of heaven and even better when they're wrapped in bacon. If you're looking for a delicious way to enjoy perogies, try smoking them. Here's how:
Preheat your smoker to 225 degrees Fahrenheit.
Cut the bacon slices in half. Wrap each frozen perogy with half a piece of bacon. Place the wrapped perogies, seam side down, on a baking sheet or grilling tray in a single layer.

Add a sprinkle of salt and black pepper on top of the perogies.

Place the perogies on the grill. You can place the perogies directly on the grill or a grilling tray with holes.

Close the lid of the smoker and let them cook for 30 minutes.

Next, remove the perogies from the smoker and place them under your broiler for 4 minutes to crisp them up.

Make sure to place them on a sheet pan or broiler pan before putting them under the broiler. Use parchment paper on the baking sheet for easy cleanup.
The internal temperature of the pierogi should read 165 degrees F.
Serve pierogies with sour cream and green onion or your favorite dipping sauce. Enjoy!
Hint: The filling of the perogy is extremely hot! Exercise caution when biting into one. Take a second and blow on it to cool it off first. Trust me; your mouth will thank you! 🙂
Notes: Alternatively, instead of placing the perogies under the broiler, you could turn up the smoker to 325 degrees F and cook until the bacon is crispy.
I have tried both ways, and I prefer the broiler method. The perogies are moist and flavorful, whereas they are a bit more dried out on the smoker at the high temperature.
I also tried brushing the perogies with olive oil before smoking them, which didn't turn out well. As a result, the dough on the perogies had a chewy texture.

📖 Substitutions
- Perogies - instead of frozen perogies from the grocery store, you can use homemade perogies. I haven't tried this recipe with fresh perogies. I think it would be even more delicious, but the cooking time would have to be decreased.
- Bacon - use turkey bacon or ham instead of regular bacon.
- Salt and pepper - use your favorite seasoning instead of salt and pepper.

Smoked bacon-wrapped perogies are a great appetizer or main dish. There are many variations, such as:
- Top the perogies with different types of cheese when you broil them in the oven, such as sharp cheddar cheese, Swiss, or mozzarella.
- For a bit of extra flavor, serve the perogies with caramelized onions, mushrooms, green onions, or extra bacon bits.

🍽 Equipment
To make these smoked bacon-wrapped pierogies, you will need a pellet smoker. There are many different models and brands of pellet grills, and they may cook differently.
I made this pierogi recipe in a Pit Boss grill with wood pellets. You can also use any other smoker such as a Traeger grill, Char-Broil, Master Chef, or ZGrill.
I also used hickory wood pellets, making the bacon taste better! But, of course, feel free to use your favorite wood pellets.
🌡️ Storage
If you have any leftovers, store them in plastic wrap or an airtight container in the fridge. They will keep for up to 3 days.
Alternatively, you can store the cooked pierogies in the freezer for up to 2 months. Simply wrap them tightly in plastic wrap and place them in a freezer-safe bag before freezing.
To reheat, thaw in the fridge if frozen, then heat in the air fryer, oven, or smoker until hot.

- Choose regular bacon. Thick-cut bacon may take too long to cook, and the perogy may be overdone.
- Make sure to cook them at 225 degrees. This cooks them slowly over low heat so they won't burn or dry out.
- Sprinkle on some shredded classic cheddar cheese before popping them under the broiler.
- If serving at a party, keep them in a slow cooker on the 'warm' setting.
- Keep an eye on them while under the broiler, so they don't burn.
- After broiling, let them cool slightly so you don't burn yourself; they are hot!
