I used to make homemade pierogies and sell them many years ago, but most of the time these days, I don't have time to make them. So, instead, I keep a box of perogies in the freezer for a quick meal.
I discovered that you can make perogies even better if you wrap them in bacon! If you have a pellet grill, you have to try these smoked pierogies - they've been described as 'little pillows of Heaven.'
Serve them with Smoked Italian Sausage and a Strawberry Spinach Salad or Bacon Ranch Pasta Salad for a complete meal everyone will love.

Why You'll Love This Recipe
- No thawing needed: Cook straight from frozen.

- Great for crowds: Ideal for game day or parties.
- Versatile: They make a great appetizer, side dish, or main course.
Recipe Ingredients
All ingredients for this recipe are shown in the pic below, and special notes are made in the bulleted list to assist you.
- Perogies. Frozen potato and cheese perogies are my go-to for this recipe. Any frozen potato-filled perogy works great, but cheese-filled ones create an extra gooey center. No need to thaw!
- Bacon. I used regular bacon. I tried thick cut but it doesn't crisp up properly.
- Salt and pepper. Freshly cracked black pepper and sea salt are all you need. The bacon and smoke add plenty of flavor.
- Optional Toppings. I love serving these with sour cream and fresh green onions, but caramelized onions and ranch dressing are amazing too!

How To Make Bacon-Wrapped Smoked Perogies
Here's how to make smoked perogies with step-by-step instructions and photos. (The video and the full recipe are in the recipe card below!)

Step 1: Preheat your pellet smoker to 350 degrees Fahrenheit. Cut the bacon slices in half. Wrap each frozen perogy with half a piece of bacon. Place the wrapped perogies, seam side down, on a greased baking sheet or grilling tray in a single layer.

Step 2: Generously sprinkle sea salt and black pepper on top of the perogies.

Step 3: Place the perogies on the pellet grill. Close the lid of the smoker and smoke for 30 minutes.

Step 4: Remove the perogies from the pellet smoker and place them on a sheet pan or broiler pan. Place them under the broiler in your oven for 2 minutes to crisp up. The pierogies are done when the bacon is crispy, and the internal temperature reaches 165 degrees F. Serve with sour cream and green onion or your favorite dipping sauce, and enjoy!
Substitutions and Variations
- Pierogies - Instead of frozen perogies, use homemade pierogies.
- Bacon - Use turkey bacon or ham.
- Cheesy - Top the perogies with different types of cheese before broiling, such as sharp cheddar cheese, Swiss, or mozzarella.
- Spicy - Sprinkle on red pepper flakes or hot sauce.
- Crispy topping - Combine browned butter, bread crumbs, and parmesan cheese and sprinkle on before broiling.
Serving Suggestions
- Classic Polish: Top with caramelized yellow onion, fresh chives, and a dollop of sour cream. Serve alongside Smoked Kielbasa for an authentic meal.
- BBQ Style: Pair with Traeger Smoked Corn, Creamy Coleslaw, and Old-Fashioned Cucumber Salad for the ultimate smokehouse meal.
- Smoker Favorites: Serve with Electric Smoked Beef Brisket or Pellet Smoked Pork Tenderloin.
- Easy Sauces: Mix sour cream with chives, onion powder, and garlic powder for a quick dip, or serve with seasoned ground beef and tomato sauce for a heartier meal.
- Fresh Herbs: Sprinkle with your choice of fresh herbs - parsley, dill, chives, thyme, rosemary, or basil to add color.
- Party Appetizer: Keep warm in a slow cooker and serve with various dips: ranch, sour cream & onion, or BBQ sauce. Perfect alongside Smoked Chicken Wings for game day! Don't forget some Red Potato Salad on the side!
Equipment
To make these smoked pierogies, you will need a pellet smoker. There are many different models and brands of pellet grills, and they may cook differently.
I made this pierogi recipe in a Pit Boss grill with wood pellets. You can also use any other smoker, such as a Traeger grill, Char-Broil, Master Chef, Masterbuilt, or ZGrill.
I also used hickory wood pellets for the best bacon flavor. But feel free to use your favorite wood pellets. You'll also need a grilling tray, baking sheet, or large skillet to smoke the perogies.
Top Tips
- Bacon: Regular-cut bacon works better than thick-cut.
- Broiling: Keep an eye on them while under the broiler so they don't burn.
- Safety first: The filling is extremely hot - let cool slightly before eating.
- Serving tip: Keep warm in slow cooker for parties

The dough is rolled out on a floured surface, cut into circles, and filled with anything from potato and cheese to sauerkraut and meat. Traditionally, they are cooked in a large pot of boiling water, removed with a slotted spoon, pan-fried over medium heat until crispy, and served with a dollop of sour cream.

Shanna says
We don’t have a smoker. Could I bake or air fry these?
Jeri Walker says
Hi Shanna, you can definitely air fry them! I just tried it out and if you wrap frozen perogies with bacon, air fry them for 10 minutes at 300 degrees F. Then, turn up the temperature to 400 degrees and air fry for 5 more minutes. Do not flip them. Let me know how they turned out for you! 🙂
