Ingredients and substitutions

- Chocolate chips. I used a combination of white chocolate chips and dark chocolate chips, but you can use all white or all dark or milk chocolate chips.
- Sweetened condensed milk. This adds the perfect amount of extra sweetener to the fudge.
- Baileys Irish Cream. This adds amazing flavor. If you want to do non-alcoholic, use Bailey's coffee creamers, or make Homemade Non-Alcoholic Baileys Irish Cream.
- Butter. This makes a creamier fudge. You can also use margarine if you like.
- Vanilla extract. This adds a little extra flavor. You could also use almond extract if you like.

How to make slow cooker Bailey's Irish Cream fudge

Step 1: Add chocolate chips, sweetened condensed milk, and butter to your slow cooker pot. Heat on low for 45 minutes to one hour, stirring every 15 minutes.

Step 2: Stir in the Baileys cream liqueur and vanilla extract once melted and smooth.

Step 3: Immediately pour mixture into an 8x8-inch baking dish. Smooth out the top with the back of a spatula. Place in the fridge for at least 2 hours to set.

Step 4: Once the fudge mixture is set, remove it from the pan by lifting up the aluminum foil. Cut into 1-inch squares and serve. Store fudge in an airtight container in the refrigerator for up to 2 weeks.
Expert tips
- High-quality sweetened condensed milk will make your fudge thicker and creamier.
- Only cook on low heat; otherwise, the fudge will burn if cooked too hot.
- Stir every 10-15 minutes.
- When cutting the fudge, rinse the knife with water between cuts to make neater-looking pieces.
- Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.
- Separate layers of fudge with parchment paper.
- Wrap fudge in cellophane bags and a pretty bow to give away as a gift.
Additions and variations
- Drizzle melted white chocolate or caramel sauce over top of the set fudge.
- Mix in chopped walnuts, pecans, or almonds.
- Add some mini marshmallows.
- Add a tablespoon of espresso powder for a subtle coffee flavor.
- Experiment with different flavors of coffee creamer.

Frequently asked questions
Yes, you can use any brand of Irish cream liqueur you prefer.
Absolutely! You can use non-alcoholic Irish cream-flavored coffee creamer instead of Baileys to avoid the alcohol content.
While the slow cooker makes it convenient, you can make a stovetop version by melting the ingredients over low heat in a saucepan. However, you will have to stir constantly to prevent burning.
To make clean cuts, dip your knife in hot water and wipe it dry before each cut. This helps prevent the fudge from sticking to the knife.
