Preheat your smoker to 350℉. Cut bacon slices in half lengthwise.
Wrap each frozen perogy with half a slice of bacon. Place seam-side down on a greased baking sheet or grilling tray in a single layer.
Sprinkle generously with salt and pepper.
Place the tray of perogies on the grill grates of your smoker. Close the lid and smoke for 30 minutes.
Remove the perogies from the smoker and place them on a baking sheet or broiler pan. Place them in your oven and broil on high for 2 minutes until the bacon is crispy and the internal temperature reaches 165℉.
Serve perogies with sour cream and green onion or your favorite dipping sauce, and enjoy! The filling of the perogy is extremely hot! Let it cool for a few minutes before taking a bite. Enjoy!

Notes
Use regular-cut bacon - thick-cut takes too long to crisp.
There is no need to thaw perogies before cooking.
Watch carefully under the broiler to prevent burning.
Keep warm in a slow cooker for parties.
The filling will be extremely hot - let them cool slightly before eating.
Hickory pellets are recommended for the best bacon flavor.
Store leftovers in the refrigerator for up to 3 days in an airtight container.
