Ingredients for fruit pizza with cream cheese frosting measured out and placed in bowls on a wooden table.

See the printable recipe card for quantities and a complete list of ingredients.

Step 1: Preparing the Sugar Cookie Base

Preheat your oven to 350°F (175°C). Grease a pizza pan or a tart pan with a bit of butter or cooking spray or line it with parchment paper.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use a hand mixer or a stand mixer for this.

Add the egg, sour cream, and vanilla extract to the butter-sugar mixture. Beat until everything is well combined.

Gradually add the flour and the salt to the wet mixture. Mix until the dough forms and all the ingredients are fully mixed.

Transfer the dough to the prepared pizza pan, tart pan, cake pan, or baking dish. Spread it in an even layer with a spatula, making sure to cover the entire surface. Spread the dough up the side of the dish if you can. Don't worry, the dough is supposed to be very soft and easy to spread.

Bake the crust in the preheated oven for 20 minutes or until the edges turn golden brown. Keep an eye on it to prevent over-baking. Once done, remove it from the oven and allow it to cool completely.

Step 2: Make The Cream Cheese Base

In a medium bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. You can use an electric mixer or a stand mixer.

Add in the vanilla extract and mix again until well combined.

Step 3: Make The Fruit Juice Glaze

In a small saucepan, combine the fruit juice, granulated sugar, cornstarch, and lemon juice over medium heat. Stir gently until the sugar dissolves completely.

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 1-2 minutes. Keep stirring until the glaze thickens to a syrupy consistency.

Remove the glaze from the heat and let it cool completely.

Step 4: Assemble the Fruit Pizza

Now comes the fun part! Take your cooled crust and carefully spread the cream cheese mixture evenly over the crust, leaving a small border around the edges.

Next up, the fruit! Time to get creative! Arrange the colorful fruit on top of the cream cheese layer in any pattern you like. You can make circles, and stripes, or just go wild and random with it - it's your masterpiece!

Once you've placed all the fruits, spoon the fruit juice glaze onto the surface. Spread it evenly with the back of the spoon, leaving a small border around the edges. The glaze will glisten, adding an extra layer of sweetness.

Then, pop your delicious creation into the refrigerator for 30 - 60 minutes to let the glaze set.

📖 Recipe FAQs

Can I use store-bought sugar cookie dough instead of making it from scratch?

You can use store-bought sugar cookie dough if you prefer a quicker and easier option. Just follow the instructions on the package for baking.

Can I make the sugar cookie fruit pizza ahead of time?

Yes! You can prepare the sugar cookie base and cream cheese frosting ahead of time. Store them separately in airtight containers in the refrigerator. About an hour before serving, assemble with fresh fruits and top it with glaze.

How long will the sugar cookie fruit pizza stay fresh?

The sugar cookie fruit pizza is best enjoyed within 1-2 days of assembly. After that, the cookie base may become soft from absorbing moisture from the fruits.

Can I add chocolate drizzle or other toppings to enhance the flavor?

Absolutely! You can add extra toppings like chocolate drizzle, caramel sauce, shredded coconut, sprinkles, or chopped nuts to customize your sugar cookie fruit pizza.

Can I use a different frosting instead of cream cheese?

Can I use a different type of pan instead of a pizza or tart pan?

Yes! You can use any round baking dish or even a rectangular baking sheet if that's what you have on hand. Just ensure that it has enough surface area to accommodate the cookie dough.

Expert Tips:
    • Make it Mini: This recipe can easily be adapted into mini fruit pizzas or even fruit pizza cookies. Same steps, just bite-sized fun.
    • Add-ons: To go above and beyond, consider adding white chocolate shavings or a sprinkle of cinnamon over your freshly arranged fruit for an extra layer of flavor.
    • Let it Cool: Make sure to let both the sugar cookie base and cream cheese frosting cool completely before assembling. This will prevent any melting or sliding off.
    • Fruit: Use fresh and ripe fruits in various shapes, like slices, wedges, or berries.
    • Slicing: To make slicing easier and neater, run a sharp knife under hot water before each cut and wipe it clean in between slices.
    • Storage: If, by some miracle you have any leftovers, they can be stored in an airtight container in the fridge for up to 2 days or on the pizza pan covered with plastic wrap. It is just as good the next day!
