Why You'll Love This Fruit Pizza
- Soft sugar cookie crust - This homemade cookie crust is easy to spread and bakes up chewy, holding the toppings perfectly.
- Versatile fruit options - Use strawberries, kiwi, blueberries, blackberries, peaches, grapes, mangos, or bananas. Use firm fruits and avoid overly watery fruits so the topping doesn't run.
- Perfect for holidays - Ideal for summer BBQs, July 4th, or Memorial Day parties.
- Delicious - A soft base, creamy frosting, fresh fruit, and glossy glaze come together in bite-size pieces of perfection.

Ingredients and Substitutions
- Sugar cookie dough. I made homemade sugar cookie dough using all-purpose flour, unsalted butter, granulated sugar, sour cream, a large egg, and vanilla extract. You can also use pre-made sugar cookie dough if you want to make it even easier.
- For the Cream Cheese Base: Cream cheese, powdered sugar, and vanilla extract. Take out the cream cheese ahead of time and leave it at room temperature to soften.
- For the Fruit Juice Glaze: Fruit juice. I used apple juice, but you can also use white grape juice or pineapple juice. You will also need some granulated sugar, cornstarch, and lemon juice. I do not recommend orange juice.
- Fresh Fruits Topping: A mix of your favorite fruits (fresh berries, kiwis, peaches, mandarin oranges, or any seasonal fruit). You can use any type of fruit you have on hand. I used fresh strawberries, blueberries, peaches, and kiwi.

How to Make Sugar Cookie Fruit Pizza
Step 1: Make the Sugar Cookie Base
Preheat your oven to 350°F. Grease a pizza pan or a tart pan with a bit of butter or cooking spray, or line it with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy using a hand mixer or a stand mixer. Add the egg, sour cream, and vanilla extract to the butter-sugar mixture. Beat until everything is well combined.
Gradually add the flour and the salt to the wet mixture. Mix until the dough forms and all the ingredients are fully mixed.

Transfer the dough to the prepared pizza pan, tart pan, cake pan, or baking dish. Spread it in an even layer using a spatula, making sure to cover the entire surface. Spread the dough up the sides of the dish if possible. Don't worry, the dough is supposed to be very soft and easy to spread.

Bake the crust in the preheated oven for 20 minutes or until the edges turn golden brown. Keep an eye on it to prevent over-baking. Once done, remove it from the oven and let it cool completely.

Step 2: Make The Cream Cheese Base
In a medium bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy using an electric mixer or stand mixer. Add the vanilla extract and mix again until well combined.

Step 3: Make the Fruit Juice Glaze
In a small saucepan, combine the fruit juice, granulated sugar, cornstarch, and lemon juice over medium heat. Stir gently until the sugar dissolves completely.
Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 1 to 2 minutes. Keep stirring until the glaze thickens to a syrupy consistency. Remove the glaze from the heat and let it cool completely.

Step 4: Assemble the Fruit Pizza
Now comes the fun part! Take your cooled crust and spread the cream cheese mixture evenly over it, leaving a small border around the edges.

Next up, the fruit! Time to get creative! Arrange the colorful fruit on top of the cream cheese layer in any pattern you like. You can make circles, stripes, or just go wild and random with it - it's your masterpiece!

Once you've placed all the fruits, spoon the fruit juice glaze onto the surface. Spread it evenly with the back of the spoon, leaving a small border around the edges. The glaze will glisten, adding an extra layer of sweetness.
Then, pop your delicious creation into the refrigerator for 30 to 60 minutes to let the glaze set.

Step 5: Cut And Serve
After chilling, slice it up like a regular pizza and serve it to your family and friends. And that's all there is to it! Enjoy!

Jeri's Tips from my Farmhouse Kitchen
- Let it cool: Cool the sugar cookie base completely before frosting, otherwise it will melt and slice off.
- Fruit: Use fresh and ripe fruits in various shapes, like slices, wedges, or berries. Don't use watery fruits like melon, which can make the cookie soggy.
- Slicing: To make slicing easier and neater, run a sharp knife under hot water before each cut and wipe it clean in between slices.
- Add-ons: To take it a step further, add white chocolate shavings, chocolate drizzle, caramel sauce, shredded coconut, sprinkles, chopped nuts, or a sprinkle of ground cinnamon.
- Make it mini: This recipe can easily be adapted into mini fruit pizzas or even fruit pizza cookies. Same steps, just bite-sized fun.
- Storage: If, by some miracle you have any leftovers, they can be stored in an airtight container in the fridge for up to 2 days or on the pizza pan covered with plastic wrap.
Variations
- Patriotic Flag Pizza: Prepare the sugar cookie base as above, but spread it evenly into a 9x13-inch baking dish or sheet pan. Spread a layer of cream cheese frosting on top. Arrange fresh blueberries in the upper left corner to create the stars section. Use sliced strawberries or raspberries to form alternating rows of stripes. Top with glaze and chill.
- Nutty Crunch: Sprinkle toasted nuts such as almonds, walnuts, pecans, or pistachios on top of the cream cheese frosting.
- Caramel Apple Crisp: Top the cream cheese frosting with thinly sliced apples cooked in caramel sauce.
- Nutella Peanut Butter Twist: Substitute cream cheese frosting with a mixture of Nutella and peanut butter.
