If you're like me and plant a garden, you probably have a TON of fresh zucchini. This hardy vegetable seems to thrive no matter the weather, and you will have so much you can't even give it away!
My favorite ways to use it are in zucchini bread with cinnamon glaze, air fryer parmesan zucchini, and Southern summer vegetable casserole. But since I grill almost every day in the summer, I love to slice it up and smoke it for a delicious smoky side dish or use it for zucchini boats.

- Zucchini. Choose firm, green zucchini without blemishes.
- Avocado oil. A neutral oil.
- Greek seasoning. Has a delicious blend of herbs and spices.

How to Make Smoked Zucchini

Step 1
Preheat your pellet grill to 250℉ (or regular grill to medium heat). Wash, dry, and slice each zucchini in half lengthwise then in half again. You want each slice to be about ¼-inch thick.
Top Tip: Cut the zucchini to the same thickness so they cook at the same rate.

Step 2
Brush or spray the zucchini slices with avocado oil.

Step 3
Sprinkle Greek seasoning over the zucchini. Don't hold back, shake it on - it adds a nice flavor.

Step 4
Place the zucchini halves on the grill in a single layer, leaving space between them.

Step 5
Smoke the zucchini for 15 minutes, then flip each piece over, oil and season them again, and smoke for another 15 minutes. Once the zucchini is fork-tender with a bit of char, remove them from the grill and serve immediately.

Substitutions and Variations
- Zucchini: Use yellow squash or eggplant instead.
- Oil: Use extra virgin olive oil instead.
- Seasoning: Instead, use Italian seasoning, Cajun seasoning, garlic powder, sea salt, and black pepper. You can also spice them up with cayenne pepper or chili flakes.
- Grill Temperature: You can increase the grill temperature to 300℉ and reduce the smoking time by about 5 minutes per side.
