Smoked zucchini on a pellet grill is the ultimate summer side dish. With just 3 ingredients, this tender and flavorful veggie will be the start of your next BBQ.
Preheat your pellet grill to 250℉ (or medium heat).
Slice each zucchini in half lengthwise, then each half in half. You want each slice to be about ¼-inch thick.
Brush or spray the zucchini slices with avocado oil and season generously with Greek seasoning.
Place zucchini slices on the preheated grill in a single layer. Smoke for 15 minutes, then flip each piece over, brush with oil and seasoning again, and smoke for 15 minutes more.
The zucchini is done when it is fork-tender with a slight char. Serve immediately and enjoy!

Try Skewers: Cut zucchini into chunks and thread them onto skewers for easy flipping.
