I made these crispy smoked wings on my Pit Boss pellet grill. You can also use a Traeger pellet grill, a pellet smoker, or gas grill. An electric smoker will not work as the temperature doesn't go up to 400 degrees F.
The 0-400 method is the easiest recipe for crispy wings. My favorite part is the super crispy chicken skin. These crispy wings are delicious dunked in creamy blue cheese dressing!

Chicken Wings - I used 2.5 pounds of split chicken wings.
Olive oil - This gives the rub something to stick to. You can also use avocado oil.
Chicken rub - I used my favorite Dry Rub For Smoked Chicken which is made with brown sugar, garlic powder, onion powder, Roasted Garlic and Pepper seasoning, chili powder, paprika, salt, and black pepper. Feel free to use any BBQ rub.

How To Make 0-400 Chicken Wings
- Dry the wings with a paper towel and place in a large bowl.
- Toss the wings with olive oil.
- Toss the wings with your favorite chicken rub or BBQ rub.
- Place the raw chicken wings in a single layer on the grill grates of your cold grill.
- Turn the grill on and set the temperature to 400 degrees F.
- Grill the wings for 20 minutes, flipping them over after 10 minutes.
- If they aren't quite ready, flip again and cook for another 5-10 minutes.
- Once the wings reach an internal temperature of 165 degrees F and the skin is as crispy as you want, remove them from the grill and toss them with your favorite sauce.
FYI
Because a Traeger takes longer to heat up, these wings will take about 30 minutes. Because a Pit Boss heats up much quicker, these wings will be ready in about 20 minutes.
Variations
- Change the flavor of the wings by changing the seasonings. Use lemon pepper seasoning, Cajun seasoning, or just salt and pepper.
- Toss the cooked wings in BBQ sauce, buffalo sauce, honey garlic sauce, or teriyaki sauce.
- Serve the wings as is with your favorite dipping sauces.
Serving Suggestions
Serve with celery sticks, carrot sticks, Air Fryer Sweet Potato Fries, and blue cheese or ranch dressing for dipping.
Garnish with sesame seeds, chopped green onion, or fresh parsley.
Leftovers and Storage
- Refrigerate leftovers in an airtight container for 3-4 days.
- Flash-freeze wings on a baking sheet, then place them in a freezer bag. Freeze for up to 2 months.
- If you can, freeze wings without any sauce on them to prevent the skin from getting soggy.
- Heat leftovers on the grill, in an air fryer, or in a microwave.
Expert Tips
- Make sure your grill is clean before using it.
- Leave space between the wings so they crisp up nicely.
- Place wings on a cooler part of your grill to avoid charring them.
- Keep a close eye on them after you flip them, they cook fast!
- They are cooked when the internal temperature of the wing reaches 165 degrees F with an instant-read thermometer.

0-400 Chicken Wings on Pellet Grill
Ingredients
- 2½ pounds chicken wings
- 3 tablespoons olive oil
- 3 tablespoons Homemade Chicken Rub (ingredients below) or any BBQ rub
Homemade Chicken Rub
- ¼ cup brown sugar
- 2 tablespoons garlic powder
- 2 tablespoons Roasted Garlic and Peppers Seasoning a Club House seasoning
- 2 teaspoons paprika
- 2 teaspoons onion powder
- 1 teaspoon chili powder
- 1 teaspoon seasoning salt
- ½ teaspoon black pepper
Instructions
- Dry the chicken wings with a paper towel and place them in a large bowl.
- Toss the wings with olive oil and coat generously with chicken rub.
- Arrange the wings in a single layer on the grill grates of your cold grill.
- Turn your grill on and set it to 400 degrees F.
- Grill the wings for 20 minutes, flipping them halfway through at the 10-minute mark. If your grill is a Traeger, the wings may take closer to 30 minutes due to its longer heat-up time.
- The wings are ready when they reach an internal temperature of 165 degrees F and the skin is crispy.
- Remove the wings from the grill and serve as is with your favorite dipping sauce, or toss in your favorite wing sauce.
