🔥 What are S’Mores?
S'mores are a treat made up of a toasted marshmallow sandwiched between two graham crackers, with a piece of chocolate placed on or inside the marshmallow.
Everyone, young and old, loves these campfire treats. The melted chocolate mixed with the gooey marshmallows is a summer favorite.
We love S'mores so much we have even made Air Fryer S'mores and Oven S'mores.

🍦 How to make no-churn s’mores ice cream
Making ice cream at home is extremely easy.
First, toast the marshmallows. You want them to be cooled when you place them in the ice cream base.
Spray or grease parchment paper with avocado oil spray or coconut oil. This will prevent the marshmallows from sticking. When they are toasted they are really hard to deal with, and the oil makes them much more manageable.
Place the mini marshmallows on the parchment paper on a baking sheet and place them under the broiler. These will not take long to turn brown, so don't walk away! When they are a light golden brown color, remove them from the oven and let them cool completely.

In a large bowl, whip the heavy cream until stiff peaks start to form.

Add in the can of sweetened condensed milk.

Add in the vanilla extract. Continue to whip until well mixed.

Place graham crackers into a medium-size Ziploc bag.

Using a rolling pin, roll over it a few times to crush them up into smaller chunks. I like to leave the chunks a bit larger, otherwise, they seem to disappear into the ice cream.

Next, take half of the chocolate bar and use a knife to cut it up into small bits of chocolate.

Next, add the crumbled graham cracker pieces, chocolate chunks, and marshmallows to the bowl with the ice cream batter.

Use a spatula to fold the mixture together.

Use a spatula to spread the ice cream mixture into a baking dish.

Top with extra graham crackers, extra toasted marshmallows, and extra chocolate if you like.

Cover with a lid or plastic wrap, and place it in the freezer on a level surface to set up. It will take about 4-6 hours to get a firmer consistency.
That's all there is to it!
When you are ready to eat the ice cream, place it on a counter at room temperature for about 10 minutes so it softens up and is easier to scoop.
Enjoy!

🥛 Substitutions
- Graham crackers: You can use any type of cookie instead, or crushed pretzels. Golden Grahams cereal also makes an excellent substitute.
- Chocolate Bar: You can use any type of chocolate bar or chocolate chips, including white chocolate, or even a couple of spoonfuls of Nutella.
- Marshmallows: You can use homemade marshmallows or any size of marshmallow. However, I do not recommend colored marshmallows; they might give it an odd flavor. You can even use store-bought marshmallow fluff - just mix it in to the ice cream batter. You can also choose not to toast your marshmallows to make this recipe even easier.
🍫 Variations
- Stir in a couple of tablespoons of chocolate sprinkles
- Add in extra chocolate chips or chocolate sauce
- Stir in some chopped walnuts
- Add a peanut butter swirl by melting some peanut butter and swirling it into the ice cream base.
- Swap out the graham crackers for crushed Oreos
- Add a swirl of caramel sauce to the ice cream for a decadent treat
- Make an ice cream sandwich out of oatmeal or chocolate chip cookies.

🍽 Equipment
To make this recipe for homemade ice cream, you will need:
- A hand mixer
- Glass baking dish or loaf pan
- Plastic wrap
🌡️ Storage
Once it's frozen, leftover ice cream will keep in the freezer in an airtight container for up to 2 weeks. Be sure to wrap it tightly in plastic wrap to prevent the formation of ice crystals.

🤩 Top tips

- Be sure to freeze the mixture for at least 4 hours before serving.

🍨 How to serve

- Pour caramel sauce or hot fudge sauce on top of the ice cream.
- Top with whip cream and sprinkles for a delicious S'mores sundae.
- Sprinkle on some crushed peanuts

❓ Frequently Asked Questions (FAQs)
When making actual s'mores, we use milk chocolate instead of dark chocolate because it melts more easily as it has a high cocoa butter content. However, in this ice cream, either chocolate will work because we are not melting it.
Yes, they work great too! I normally do not have mini marshmallows on hand, so I use big marshmallows and use kitchen scissors to cut them into cubes. You will get about four little marshmallows out of one big marshmallow.

- Transfer the mixture to a glass baking dish or loaf pan. Top with extra graham crackers, crushed chocolate, and extra toasted marshmallows. Cover with plastic wrap. Make sure to pat the plastic wrap onto the ice cream to prevent the formation of ice crystals.
