This ice cream only requires simple ingredients that are easy to find at any grocery store.
Ingredient Notes
- Heavy cream, 35% milkfat. This gives it a thick and creamy base.
- Sweetened condensed milk adds just the right amount of sweetener and prevents the ice cream from getting too hard. You can also use low-fat sweetened condensed milk.
- Marshmallows. I used mini marshmallows, but you could use any size of marshmallow. I do not recommend colored marshmallows; they might give it an odd flavor. You can even use store-bought marshmallow fluff - just mix it into the ice cream batter. You can also choose not to toast your marshmallows to make this recipe even easier.
- Graham Crackers. I used regular graham crackers, but you can also use low-fat graham crackers, Golden Oreos, or crushed pretzels. Golden Graham's cereal also makes an excellent substitute.
- Chocolate bar. You can use any type of chocolate bar or chocolate chips, including white chocolate, milk chocolate, or dark chocolate. You can even use a couple of spoonfuls of Nutella.
- Chocolate chips for extra chocolate flavor or for melting if you want to drizzle melty chocolate on top.

🍦 How To Make Homemade S’mores Ice Cream With No Eggs
Step-By-Step Instructions
Step 1: First, toast the marshmallows. You want them to be cooled when you place them in the ice cream base. Place parchment paper on a baking sheet and spray or grease with avocado oil or coconut oil to prevent sticking.
Step 2: Place the mini marshmallows on the baking sheet and place under the broiler for a couple of minutes. These will not take long to turn brown, so don't walk away! When they are a light golden brown color, remove them from the oven and cool completely.
Step 3: Whip the heavy cream in a large mixing bowl with an electric mixer until stiff peaks start to form. Add the can of sweetened condensed milk and pure vanilla extract and whip until combined.
Step 4: Place graham crackers in a medium-size Ziploc bag. Use a rolling pin to crush them up into smaller chunks. Leave the chunks a bit larger, otherwise, they disappear into the ice cream.
Step 5: Take half of the chocolate bar and use a knife to cut it up into small bits of chocolate. Add the crushed graham crackers, chocolate chunks, and marshmallows to the bowl with the ice cream batter.
Step 6: Use a spatula to fold the mixture together and use a spatula to spread it into a baking dish. Top with extra graham crackers, extra toasted marshmallows, and extra chocolate if you like.
Step 7: Cover with a lid or plastic wrap, and place it in the freezer on a level surface for 4-6 hours to firm up. When ready to serve, place it on your counter at room temperature for 10 minutes to soften so it is easier to scoop.

- Stir in a couple of tablespoons of chocolate sprinkles, cocoa powder, extra chocolate chips, or chocolate sauce.
- Stir in some chopped walnuts and a swirl of caramel sauce.
- Add a peanut butter swirl by melting some peanut butter and swirling it into the ice cream base.
- Make an ice cream sandwich out of oatmeal or chocolate chip cookies.

Once frozen, leftover toasted marshmallow ice cream can be stored in the freezer in an airtight container for up to 2 weeks. Be sure to wrap it tightly in plastic wrap to prevent the formation of ice crystals.

When making actual s'mores, I use milk chocolate instead of dark chocolate because it melts more easily as it has a high cocoa butter content. However, in this ice cream, either chocolate will work because we are not melting it.
Yes, they work great too! I normally do not have mini marshmallows on hand, so I use big marshmallows and cut them into cubes with kitchen scissors. You will get about four little marshmallows out of one big marshmallow.

Homemade Smores Ice Cream With No Eggs
Ingredients
- 2 cups heavy whipping cream 35% milkfat
- 1 can sweetened condensed milk
- 1 teaspoon vanilla extract
- 1½-2 cups mini marshmallows
- 12 squares graham crackers
- ½ cup chocolate bar milk chocolate or dark chocolate
Instructions
- Toast the mini marshmallows by placing them on greased parchment paper on a baking sheet. Turn your oven on to 'broil'. Place marshmallow under the broiler for 1-2 minutes until they are golden brown. Remove from the oven to cool while you prepare the ice cream.
- In a large bowl, whip the cream with an electric hand mixer until stiff peaks start to form. This will take about 2-3 minutes on high speed.
- Add the can of sweetened condensed milk and vanilla extract. Blend until stiff peaks form.
- Add toasted marshmallows, chocolate chunks, and graham crackers to the ice cream. Mix in with a spatula.
