    🔥 What are S’Mores?

S'mores are a treat made up of a toasted marshmallow sandwiched between two graham crackers, with a piece of chocolate placed on or inside the marshmallow.

Everyone, young and old, loves these campfire treats. The melted chocolate mixed with the gooey marshmallows is a summer favorite.

We love S'mores so much we have even made Air Fryer S'mores and Oven S'mores.

😃 Why you will love this recipe

    • Homemade ice cream is the best ice cream. It is so easy to make and quick to prepare.
    • It is perfect for when you have company coming over. You can make it earlier in the day, pop it in the freezer, and when you’re ready to serve, take it out and enjoy it!
    • You will love the creamy texture of this homemade ice cream and the natural flavor.
    • It is much easier to make than churned ice cream.
    • It is full of great S'mores flavor with each bite, and everyone will love it!
    • This is a great treat to cool off on hot days.

    🍫 Ingredients

This ice cream only requires simple ingredients that are easy to find at any grocery store.

A picture of the ingredients needed to make no churn smores ice cream.
    • Heavy cream, 35% milkfat.
    • Sweetened condensed milk
    • Vanilla extract
    • Mini marshmallows
    • Graham Crackers. I used regular graham crackers, but you can also use low-fat graham crackers.
    • Chocolate bar, milk chocolate, or dark chocolate.
    • Chocolate chips for extra chocolate flavor or for melting if you want to drizzle melty chocolate on top.

See the recipe card for quantities.

🍦 How to make no-churn s’mores ice cream

Making ice cream at home is extremely easy.

First, toast the marshmallows. You want them to be cooled when you place them in the ice cream base.

Spray or grease parchment paper with avocado oil spray or coconut oil. This will prevent the marshmallows from sticking. When they are toasted they are really hard to deal with, and the oil makes them much more manageable.

Place the mini marshmallows on the parchment paper on a baking sheet and place them under the broiler. These will not take long to turn brown, so don't walk away! When they are a light golden brown color, remove them from the oven and let them cool completely.

In a large bowl, whip the heavy cream until stiff peaks start to form.

Add in the can of sweetened condensed milk.

Add a can of sweetened condensed milk to the whipping cream

Add in the vanilla extract. Continue to whip until well mixed.

Add vanilla to sweetened condensed milk and whipping cream

Place graham crackers into a medium-size Ziploc bag.

Using a rolling pin, roll over it a few times to crush them up into smaller chunks. I like to leave the chunks a bit larger, otherwise, they seem to disappear into the ice cream.

Next, take half of the chocolate bar and use a knife to cut it up into small bits of chocolate.

Pieces of a chocolate bar cut up into tiny little pieces

Next, add the crumbled graham cracker pieces, chocolate chunks, and marshmallows to the bowl with the ice cream batter.

The graham crackers, toasted marshmallows, and chopped chocolate chunks added to the whipped cream mixture.

Use a spatula to fold the mixture together.

Use a spatula to spread the ice cream mixture into a baking dish.

The ice cream mixture spread into a large baking dish.

Top with extra graham crackers, extra toasted marshmallows, and extra chocolate if you like.

The ice cream mixture topped with extra graham crackers, chopped chocolate, and toasted marshmallows.

Cover with a lid or plastic wrap, and place it in the freezer on a level surface to set up. It will take about 4-6 hours to get a firmer consistency.

That's all there is to it!

When you are ready to eat the ice cream, place it on a counter at room temperature for about 10 minutes so it softens up and is easier to scoop.

    Enjoy!

    🥛 Substitutions

    • Graham crackers: You can use any type of cookie instead, or crushed pretzels. Golden Grahams cereal also makes an excellent substitute.
    • Chocolate Bar: You can use any type of chocolate bar or chocolate chips, including white chocolate, or even a couple of spoonfuls of Nutella.
    • Marshmallows: You can use homemade marshmallows or any size of marshmallow. However, I do not recommend colored marshmallows; they might give it an odd flavor. You can even use store-bought marshmallow fluff - just mix it in to the ice cream batter. You can also choose not to toast your marshmallows to make this recipe even easier.

    🍫 Variations

    • Stir in a couple of tablespoons of chocolate sprinkles
    • Add in extra chocolate chips or chocolate sauce
    • Stir in some chopped walnuts
    • Add a peanut butter swirl by melting some peanut butter and swirling it into the ice cream base.
    • Swap out the graham crackers for crushed Oreos
    • Add a swirl of caramel sauce to the ice cream for a decadent treat
    • Make an ice cream sandwich out of oatmeal or chocolate chip cookies.

    🍽 Equipment

To make this recipe for homemade ice cream, you will need:

    • A hand mixer
    • Glass baking dish or loaf pan
    • Plastic wrap

    🌡️ Storage

Once it's frozen, leftover ice cream will keep in the freezer in an airtight container for up to 2 weeks. Be sure to wrap it tightly in plastic wrap to prevent the formation of ice crystals.

    🤩 Top tips

For best results, follow these tips:

    • Spray the parchment paper with avocado oil or coconut oil to prevent the marshmallows from sticking when toasting them.
    • Make sure that the heavy cream is chilled. Take it out of the fridge just when you are ready to use it.
    • Chill the beaters and bowl before whipping the heavy cream. This will help it set up faster.
    • Chill the sweetened condensed milk before adding it to the ice cream base.
    • Place the plastic wrap directly on top of the ice cream batter to prevent ice crystals from forming. Smooth it gently on top of the ice cream batter with your fingers.
    • Be sure to freeze the mixture for at least 4 hours before serving.
    • Let the ice cream soften for 10 minutes at room temperature to make it easier to scoop.

    🍨 How to serve

    • Serve in bowls.
    • Serve in ice cream cones.
    • Place some scoops in a waffle bowl.
    • Serve with extra chocolate chips on top and toasted marshmallows on top.
    • Pour caramel sauce or hot fudge sauce on top of the ice cream.
    • Top with whip cream and sprinkles for a delicious S'mores sundae.
    • Sprinkle on some crushed peanuts

    ❓ Frequently Asked Questions (FAQs)

What chocolate is best for s'mores?

When making actual s'mores, we use milk chocolate instead of dark chocolate because it melts more easily as it has a high cocoa butter content. However, in this ice cream, either chocolate will work because we are not melting it.

I don't have any mini marshmallows, can I use large marshmallows?

Yes, they work great too! I normally do not have mini marshmallows on hand, so I use big marshmallows and use kitchen scissors to cut them into cubes. You will get about four little marshmallows out of one big marshmallow.

    Equipment

    • A hand mixer.
    • Glass baking dish or loaf pan
    • Plastic wrap

    Ingredients

    • 2 cups heavy whipping cream 35% milkfat
    • 1 can sweetened condensed milk
    • 1 teaspoon vanilla extract
    • 1½-2 cups mini marshmallows
    • 12 squares graham crackers
    • ½ cup chocolate bar milk chocolate or dark chocolate

    Instructions

    • Toast the mini marshmallows by placing them on greased parchment paper on a baking sheet. Turn your oven on to 'broil'. Place marshmallow under the broiler. When the marshmallows are nicely toasted brown, remove the tray from the oven to let them cool while you prepare the ice cream.
    • In a large bowl, whip the cream with an electric hand mixer until stiff peaks start to form. This will take about 2-3 minutes on high speed.
    • Add the can of sweetened condensed milk and vanilla. Blend at medium speed until stiff peaks form and you have a creamy texture.
    • Add toasted marshmallows, chocolate chunks, and graham crackers to the ice cream. Mix in with a spatula.
    • Transfer the mixture to a glass baking dish or loaf pan. Top with extra graham crackers, crushed chocolate, and extra toasted marshmallows. Cover with plastic wrap. Make sure to pat the plastic wrap onto the ice cream to prevent the formation of ice crystals.
    • Place the ice cream in the freezer until it hardens, about 4-6 hours.
    • Serve with extra toasted marshmallows, hot fudge, or chocolate chips.
    • Enjoy!

It's school holidays down under and was looking for different ways to amuse the kids. As a s'mores addicted family, this was absolutely perfect! Love that it's no churn so you made it super easy for them. Only problem was it didn't last long enough! Too yum.
