Ingredients
For the Vanilla Simple Syrup
- 1 cup water
- ½ cup white sugar
- ½ teaspoon vanilla extract
For the Iced White Chocolate Mocha
- 1 tablespoon vanilla simple syrup
- 2 ounces espresso or strong coffee
- ¼ cup white chocolate
- ½ cup milk
- 1 cup ice
- whipped cream optional
Instructions
- Prepare the vanilla simple syrup: In a small saucepan over medium heat, whisk together the white sugar and water until the sugar is dissolved. Remove from heat and whisk in the vanilla extract. Cool completely. Store in the fridge in an airtight container or jar until ready to use.
- Blend espresso and white chocolate: Add 2 ounces of espresso and melted white chocolate to a blender and blend until smooth.
- Assemble your iced white chocolate mocha: Take a large glass and fill it ⅔ of the way with ice cubes. Add 1 tablespoon vanilla simple syrup, the espresso and white chocolate mixture, and ½ cup of milk to the glass. Top with whipped cream if desired.
