These Smoked Pork Chops on a Pellet Grill are thick, juicy, and full of smoky flavor. Whether you're cooking on a Pit Boss, Traeger, or another pellet grill, this easy recipe makes perfectly tender pork chops with a flavorful dry rub every time.
4bone-in pork chopsor boneless pork chops (at least 1-inch thick)
2tablespoonsolive oil
3tablespoonspork rub (homemade or store-bought)
Pork Dry Rub
2teaspoonsbrown sugar
1teaspoonpaprikaor smoked paprika
½teaspoononion powder
½teaspoongarlic powder
½teaspoonchili powder
½teaspoondry mustard powder
½teaspoonkosher salt
⅛teaspoonblack pepper
Instructions
Preheat your pellet grill or smoker to 250℉.
Pat the pork chops dry with paper towels, then brush both sides with olive oil.
Mix the pork rub ingredients together and coat the pork chops generously on all sides.
Place the pork chops directly on the grill grates, leaving a little space between each one. Smoke for 30 minutes, flip, then continue smoking for another 30 minutes, or until the internal temperature reaches 145°F.
Remove the pork chops from the smoker and let rest for 5 minutes.

Notes
Use pork chops that are at least 1 inch thick. Thicker pork chops will stay juicier during the smoking process.
Leave space between the chops.
Resist opening the lid too often.
Apple, cherry, pecan, or hickory pellets all work well.
