Make easy Air Fryer Zucchini Parmesan in under 15 minutes! This air-fried zucchini is cheesy and crispy and perfect for a quick side dish or snack. It's also keto-friendly, low-carb, and gluten-free.
1-2small-mediumzucchiniwashed, dried, cut into ¼-inch thick rounds
2tablespoonolive oil
4tablespoonparmesan cheese
¼teaspoonsea salt
¼teaspoonblack pepper
Instructions
Preheat your air fryer to 400℉.
Place the zucchini slices in a single layer in the air fryer basket.
Spray, drizzle, or brush oil onto the top of the zucchini rounds.
Use a small spoon to sprinkle a small amount of parmesan cheese on each zucchini round. Then, spread it out to cover the top of each round. Sprinkle with salt and black pepper.
Air fry the zucchini for 12 minutes at 400℉. At the halfway mark, flip the sliced zucchini over with tongs, and repeat the steps above: Add oil, parmesan cheese, salt, and pepper. Air fry zucchini until the parmesan turns a light golden brown.
Serve immediately with your favorite dipping sauce.
Notes
Cut the zucchini into thin, even rounds. If the rounds are too thick, they will take longer to cook and may not get as crispy as you would like.
Use small to medium size zucchini for best results.
Depending on the size of your air fryer, you may need to cook the rounds in two or three batches.
