Preheat your air fryer to 330°F.
In a mixing bowl, combine the sliced peaches, brown sugar, granulated sugar, cornstarch, cinnamon, ginger, nutmeg, salt, and lemon juice. Mix well until the peaches are coated with the sugar and spice mixture.
Transfer the peach mixture to a greased baking dish that fits into your air fryer. Smooth out the top with a spatula.
In another mixing bowl, whisk together the flour, baking powder, and salt. Stir in milk and melted butter until just combined.
Spoon the batter over the top of the peach mixture, and smooth it out with a spatula.
In a small mixing bowl, mix together the remaining ¼ cup of brown sugar and ½ teaspoon of ground cinnamon. Sprinkle this mixture on top of the batter.
Place the baking dish into the preheated air fryer basket and air fry for 20-25 minutes, or until the top is golden brown and the filling is bubbly.
Carefully remove the baking dish from the air fryer and let it cool for a few minutes before serving.
Serve the peach cobbler warm with a scoop of vanilla ice cream or whipped cream and enjoy!
Notes
Use a baking dish that fits your air fryer basket (typically 7-inch round works well) or four ramekins.
Fresh peaches need peeling - blanch in boiling water for 30 seconds, then plunge in ice water for easy peeling.
Drain canned or thawed frozen peaches well before using.
Cover with foil if the top browns too quickly.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
