Slow Cooker Red Cabbage

Ingredients

red cabbage (about 2-3 pounds)
quartered and sliced thinly

apple
cored and sliced thinly

red onion
halved and sliced thinly

brown sugar

teaspoon
salt

ground cinnamon
¼
teaspoon
black pepper
¼
teaspoon
ground cloves
½
cup
apple juice
¼
cup
apple cider vinegar

tablespoons
butter
cut into small pieces
Instructions
Grease your slow cooker insert with butter or cooking spray.
Layer half of the sliced red cabbage in the bottom of your slow cooker. Add half of the sliced apple and red onion on top of the cabbage.
Sprinkle half of the brown sugar, salt, cinnamon, black pepper, and cloves over the layers.
Repeat the layering process with the remaining cabbage, apple, onion, and seasonings.
Pour the apple juice and apple cider vinegar evenly over the layered vegetables. Place the butter pieces on top.
Cover and cook on low for 6-8 hours or high for 3-4 hours, until the cabbage is tender but still has a slight bite.
Before serving, gently stir to combine all ingredients and coat everything with the cooking liquid. Serve immediately and enjoy!

Notes
Core your cabbage thoroughly - the tough center can remain chewy even after slow cooking.
Keep the slow cooker covered - removing the lid frequently will significantly increase cooking time.
The cabbage will reduce in volume by about half during cooking - don't worry if your slow cooker looks very full at first.
Leftovers can be stored in the refrigerator in an airtight container for 3-4 days.
