This Starbucks Copycat Mango Dragonfruit Refresher is the perfect summer drink to enjoy on a hot day. The best part is that it uses real fruit, is incredibly easy to make, and is much cheaper than the coffee shop version.
Combine the diced dragonfruit, mango, sugar, water, and lemon juice in a medium saucepan over medium heat.
Bring the mixture to a boil, then reduce to low and simmer for 10 minutes, occasionally stirring and mashing the fruit with a potato masher to break it down.
Pour the mixture into a blender or food processor and blend until smooth. Pour the blended mixture into a jar and cool in the refrigerator. This dragonfruit base will keep for up to 5 days.
Assemble the Refresher
Fill a Boston shaker, cocktail shaker, or mason jar with 1 cup of ice cubes, ½ cup of the dragonfruit base, ½ cup of cold water, ½ teaspoon of green coffee bean extract (if using), and a few pieces of freeze-dried dragonfruit. Secure the lid tightly and shake for 20-30 seconds.
Remove the lid and pour the mixture into a tall glass. If you like, add more ice cubes and garnish with freeze-dried dragonfruit pieces. Serve immediately and enjoy!
Notes
The dragonfruit base makes enough for 4 refresher drinks. Cool completely before using.
If you don’t have a cocktail shaker, you can use a mason jar with a lid or even a regular glass and just stir it.
For an even more vibrant color, add 1 teaspoon of dragonfruit powder to the dragonfruit base.
The green coffee bean powder is optional but adds a caffeine boost similar to the original Starbucks version.
