2cupsRoma tomatoes, cored, seeded, and finely chopped(about 1 pound, or 4-5 medium tomatoes)

1jalapeño pepper, seeded, membrane removed, and finely chopped

Prep the Tomatoes: Slice the Roma tomatoes in half and scoop out the wet inner pulp and seeds. Discard the pulp, then finely dice the firm outer flesh. Place into a medium-sized mixing bowl.
Add Aromatics: Finely chop the red onion and jalapeño pepper to a uniform size. Add them to the bowl with the tomatoes.
Dress and Season: Pour the freshly squeezed lime juice over the ingredients, then add the finely chopped cilantro and sea salt.
