This easy blueberry compote combines juicy blueberries with sugar, fresh lemon, and vanilla for a sweet, glossy fruit topping ready in just 15 minutes. It's packed with juicy whole berries and is delicious served warm or cold over pancakes, waffles, yogurt, cheesecake, and ice cream.
Combine. Add the blueberries, sugar, lemon juice, and lemon zest to a medium saucepan. Stir gently to combine.
Cook. Place the saucepan over medium heat and cook for 3-4 minutes, stirring occasionally, until the sugar dissolves and the blueberries begin to soften and release their juices.
Simmer. Reduce the heat to medium-low and simmer uncovered for 5-7 minutes, stirring occasionally. Gently mash some of the softened blueberries against the side of the saucepan with the back of a spoon, leaving plenty of berries whole.
Check the consistency. Remove the compote from the heat when some of the berries have burst and the juices look glossy and slightly syrupy. The sauce should still look a little loose; it will thicken considerably as it cools.
Add the vanilla. Stir in the vanilla extract.
Cool and serve. Let the blueberry compote cool for 10-15 minutes to thicken before serving. Serve warm, at room temperature, or chilled.
Notes
Fresh or frozen blueberries. Either works well. There's no need to thaw frozen blueberries before using them. Frozen berries may need an extra 1-2 minutes of simmering time because they release more liquid.
Too thin? Let the compote cool for 10-15 minutes first. If it's still too thin, return it to the saucepan and simmer for another 2-3 minutes.
Make ahead. Prepare the compote ahead of time and keep it covered in the refrigerator until you're ready to serve.
Storage. Store cooled blueberry compote in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
