This Easy Classic Meatloaf Recipe is an updated version of the more traditional meatloaf. This meatloaf is made with oatmeal, is super moist, and full of flavor. The sweet but tangy sauce is the real show-stopper here. It has so much flavor, it's a party for your tastebuds.
In a large bowl, mix 2 pounds of ground beef, ½ yellow onion, ½ red onion, finely chopped, 4 cloves of garlic, finely chopped.
Add in 1 cup of rolled oats, 2 eggs, 1 teaspoon salt, and ¼ teaspoon pepper.
Mix well, then shape into a loaf shape.
Then place in a cast iron pot or large baking dish. Cover and place in the oven for 1 hour.
Instructions For Making The Sauce
To a medium-size pot, add ½ cups of coconut sugar (or brown sugar), ¾ cup ketchup, 2 tablespoon soy sauce, 2 teaspoon Worcestershire sauce, ½ cup of BBQ sauce, 1 tablespoon dry mustard, 1 cup HOT water.
Using a whisk, mix all ingredients until smooth. Heat on stove on medium heat until hot and thickened slightly.
After meatloaf has been cooking for 1 hour, I use a turkey baster to suck out any grease from around the meat.
I then pour the sauce on top of the meatloaf and place it back in the oven, covered, for an additional 20 minutes. The sauce will carmelize as it cooks, and turns out SO good.
The meatloaf will be cooked when the internal temperature is 160 degrees Fahrenheit.
Let meatloaf rest for 10 minutes before slicing, and spoon sauce over meatloaf to serve.
