These healthy Spring Rolls are so fun and easy to make at home. They are filled with grated carrot, cucumber, sliced avocado, spinach, rice vermicelli noodles, and tender shrimp. Serve them as an appetizer or as a light meal. Perfect for hot summer days when you don't want to turn on the oven. Check out the video!

All that is required to make this easy recipe is: -rice roll wrappers -rice vermicelli noodles -carrots -spinach -cucumber -shrimp -avocado

Add the shrimp, spinach, and avocado to the middle of a rice paper wrapper

Next, add carrots and rice noodles.

Pick up one side of the rice paper and fold it over the topping, then the other side of the rice paper roll and pull it snugly over the toppings, then do the same with the top and the bottom.

Serve with delicious Hoisin Peanut sauce.
