– 2-3 pound venison roast –olive oil –chili powder –brown sugar –garlic powder –onion powder –paprika –oregano –kosher salt –black pepper
Preheat the smoker. Rub the deer roast all over with olive oil.
Sprinkle the dry rub all over the roast.
Place roast in the smoker. Close the lid and smoke until the desired internal temperature is reached. Turn down the temperature to 'smoke', and smoke for 1 hour.
Remove the roast from the smoker, cover with aluminum foil, and allow to rest for 10-15 minutes.
Place meat on a cutting board and slice it into thin slices.
