Cut pork belly into cubes, place in a bowl, and toss with olive oil and dry rub.

Place seasoned pork belly on  the grill and smoke for 2 hours.

Transfer to an aluminum pan and toss with the homemade sticky glaze.

Smoke for another 1.5 hours, and turn up the temperature at the end to caramelize the glaze.
