Cook whole beets in large pot until fork tender. Peel skins and cut into wedges.

Make a pickling brine by combining water, vinegar, sugar, and pickling spice in a pot over medium heat.

Add cooked beets to a jar with pickling brine. Secure the lid.

Process in a water bath canner for 30 minutes or place in the fridge.
