Mexican street corn is a delicious and easy-to-make summer side dish that's perfect for Cinco de Mayo celebrations. It's made by grilling corn until lightly charred, then spreading a creamy mayo mixture and crumbled cheese on top. All that is required to make this easy recipe is: -corn on the cob -butter -mayonnaise -sour cream -Cotija or feta cheese -chili powder -cumin -garlic powder -lime juice -fresh cilantro

Preheat your grill to medium-high heat. Husk the corn cobs. Brush each ear of corn with butter.

Place the corn directly on the grill grates and grill for 15-20 minutes, until lightly charred.

Prepare the creamy sauce by mixing together the mayo, sour cream, lime juice, chili powder, cumin, and garlic powder.

Once the corn is done, spread the creamy mayo mixture on each ear of corn.

Sprinkle crumbled Cotija cheese or feta cheese over the mayonnaise mixture.
